SARA’S SPICY CILANTRO SALAD
1 head of lettuce (any type) or a mix is good, too. I like to mix red leaf, romaine & green leaf.
1 bunch of cilantro, chopped
1-2 c. of shredded pepper jack cheese
2-3 diced roma tomatoes
1-2 c. of crushed tortilla chips
1-2 c. of Lighthouse Jalapeno Ranch dressing
Shred lettuce into small strips and chop up cilantro. Toss in a big bowl. Add tomatoes, cheese & chips. Mix altogether and toss with dressing right before serving. To make a heartier meal, add grilled chicken breast strips or serve chicken on the side. If you want to make this ahead, it's best to keep tomatoes, cheese, and chips in separate bowls, then toss all ingredients together with dressing right before serving.
CRANBERRY SPINACH SALAD
SALAD:
1 bag of baby spinach leaves
1 c. craisins
1 c. slivered almonds
1 T. butter
Saute almonds in butter until golden brown. Set aside & cool. Make dressing while almonds are cooling.
DRESSING:
2 T. sesame seeds
1 T. poppyseeds
½ c. sugar
2 T. minced red onion
¼ t. paprika
¼ c. white vinegar
¼ c. apple cider vinegar
½ c. oil
Toss salad ingredients together, top with dressing just before serving. This is my FAVORITE side salad for Thanksgiving & Christmas…the colors and tastes go really well with your traditional holiday meals. It’s also a great salad for the hot weather… I just add in grilled chicken to make it into a meal by itself.
